Since ancient times, people have known about cinnamon. Although it was brought to Egypt as early as 2000 BC, some who claimed it originated in China mistook it for Cinnamomum cassia, a related species.  A beautiful inscription documents the gift of cinnamon and cassia to the temple of Apollo at Miletus. Cinnamon was so highly valued in ancient cultures that it was seen as a gift fit for monarchs and even a deity.  In order to maintain their monopoly as suppliers, those in the spice trade in the Mediterranean for centuries kept their source a trade secret. 

One of the two primary varieties of cinnamon—Ceylon ("true" cinnamon) or Cassia (the common variety)—or a combination of the two—could be the cinnamon you purchase at the shop. Although Ceylon is simpler to grind, it could not offer the same health advantages.
